Ingredient

  • 7 tbs unsalted butter
  • 1-2 tsp truffle oil Or 1-2 tsp finely grated truffle
  • 1 finely minced shallot
  • 1 minced garlic clove
  • 3 tbs dry white wine (optional)
  • 2 tbs heavy cream (Optional, for a creamier version)
  • 1 tbs grated parmesan (optional)
  • salt and ground black pepper to taste.
  • Finely chopped fresh parsley/chives (optional, for garnish)

Method

  1. In a small saucepan over low heat, melt half of the butter. Add the shallot and cook gently until soft and translucent (about 2–3 minutes). Add the garlic and cook for 30 seconds.
  2. Add the white wine and simmer until mostly reduced.
  3. Lower the heat and whisk in the remaining butter a little at a time until melted and smooth. Stir in the truffle oil or fresh truffle.
  4. For a creamier sauce, stir in the cream and Parmesan, heating gently without boiling.
  5. Add salt and black pepper to taste.
  6. Spoon over steak, toss through freshly cooked pasta, or drizzle over roasted vegetables. Garnish with fresh herbs if desired.
