Ingredients
- 750g pork belly, skin removed and cut into 2-3cm squares
- ½ cup cornflour
- 2 teaspoons smoked paprika
- 2 teaspoons ground cumin
- 2 teaspoons sea salt flakes
- ½ teaspoons finely ground white pepper
- ¼ teaspoons finely ground black pepper\
- vegetable oil, for deep frying
- lemon wedges and chilli sauce, to serve
Method
- Combine cornflour, paprika, cumin, coriander, sea salt, white pepper and black pepper in a bowl. Add pork belly to spice mixture and toss until lightly coated.
- Heat oil in a saucepan over medium heat. Deep-fry pork in batches for 4-5 minutes or until golden and crisp. Transfer to a tray lined with paper towel and keep warm. Repeat with remaining pork.
- Serve pork with lemon wedges and chilli sauce.
