Tender delicious roast pork with awesome crackling, locally sourced Australian pork.
To get the crackling on the Weber.
1.Patted dry excess moisture from the pork
2.brought the pork to room temperature 1 hour in the bench.
3. Rubbed course ground salt into the score marks.
3. Combined oil and juice from 1 lemon into a bowl and covered it liberally. 
4. Cooked on high for 40 mins before reducing temp. 
So Good.
