Ingredient

  • 8 Oz mushrooms sliced
  • 1 Cup beef stock/broth
  • 1/2 Cup heavy cream
  • 1 tbs Cajun seasoning
  • 2 tsp black peppercorns
  • 1 tbs chopped green onions
  • 1 tbs butter

Method

  1. Heat butter or oil in a pan over medium heat and sauté finely chopped onions.
  2. Add sliced mushrooms and cook until browned and their moisture has reduced.
  3. Stir in Cajun seasoning and crushed black pepper, cooking briefly to release the aromas.
  4. Deglaze the pan with a splash of stock and allow it to reduce slightly.
  5. Pour in cream and simmer gently until the sauce thickens to your desired consistency.
  6. Taste and adjust seasoning with salt and additional pepper if needed, then serve hot over grilled steak.
