Ingredient

  • 2 tablespoons unsalted butter
  • 1 small shallot, finely minced
  • 2 cloves garlic, minced
  • 1 teaspoon Cajun seasoning (adjust to taste)
  • ½ teaspoon smoked paprika (optional, for extra smokiness)
  • ½ cup heavy cream
  • ¼ cup chicken or beef stock
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon lemon juice (optional, for brightness)

Method

  1. Melt the butter in a medium saucepan or skillet over medium heat. Add the shallot and garlic, cooking until softened and fragrant (about 2–3 minutes).
  2. Stir in Cajun seasoning and smoked paprika, cooking for 30 seconds to release their aroma.
  3. Pour in the stock and cream, stirring to combine. Bring to a gentle simmer.
  4. Cook for 5–7 minutes, stirring occasionally, until the sauce thickens slightly.
  5. Stir in lemon juice (if using), and season with salt and pepper to taste.
