Ingredient

  • 1 tablespoon butter
  • 1 small shallot, finely minced
  • 2 cloves garlic, minced
  • ½ cup sliced mushrooms (button or cremini)
  • ½ teaspoon Cajun seasoning
  • ½ teaspoon freshly cracked black pepper
  • ¼ cup bourbon
  • ½ cup heavy cream
  • ¼ cup beef or chicken stock
  • Salt, to taste
  • Fresh parsley, chopped (optional, for garnish)

Method

  1. Melt butter in a skillet over medium heat. Add shallots and garlic and cook until fragrant (about 2 minutes).
  2. Add sliced mushrooms and cook until browned and softened, about 4–5 minutes.
  3. Stir in Cajun seasoning and cracked black pepper, cooking for 30 seconds to release flavours.
  4. Carefully pour in bourbon and let it simmer for 1–2 minutes to reduce slightly.
  5. Stir in heavy cream and stock. Simmer gently for 4–5 minutes until the sauce thickens to a creamy consistency.
  6. Adjust salt to taste. Garnish with fresh parsley if desired and serve over steak.
