Ingredient
- 1 tablespoon butter
- 1 small shallot, finely minced
- 2 cloves garlic, minced
- ½ cup sliced mushrooms (button or cremini)
- ½ teaspoon Cajun seasoning
- ½ teaspoon freshly cracked black pepper
- ¼ cup bourbon
- ½ cup heavy cream
- ¼ cup beef or chicken stock
- Salt, to taste
- Fresh parsley, chopped (optional, for garnish)
Method
- Melt butter in a skillet over medium heat. Add shallots and garlic and cook until fragrant (about 2 minutes).
- Add sliced mushrooms and cook until browned and softened, about 4–5 minutes.
- Stir in Cajun seasoning and cracked black pepper, cooking for 30 seconds to release flavours.
- Carefully pour in bourbon and let it simmer for 1–2 minutes to reduce slightly.
- Stir in heavy cream and stock. Simmer gently for 4–5 minutes until the sauce thickens to a creamy consistency.
- Adjust salt to taste. Garnish with fresh parsley if desired and serve over steak.
